Max Dex bonus only applies to AC, which means it doesn't affect initiative, but fatigue does apply to sleeping in medium or heavy armor. Heavier armors in 3.5 also cause penalties to most physical skills, restrict certain class features, take longer to don and doff, has more serious penalties for nonproficiency, and can increase encumbrance.Additionally, most armor has a max dex bonus, which is unfortunate if you're boosting your dex in order to avoid touch attacks (the kind that really matter anyway) and get high initiative. Then there's other stuff like sleeping in heavy armor makes you fatigued (IIRC).
Despite its overall simplifications, vanilla 5e actually maintains most of these: disadvantage on stealth rolls, restricted Dex bonus to AC, serious nonproficiency penalties, and higher weight.
